The Coffee and Its Flavor

This medium roast Colombian coffee offers a clean, well-balanced cup with floral and sweet notes that distinguish it from the typical nutty, heavy Colombian profile. The flavor includes hints of caramel, nutty undertones, and semi-sweet chocolate, balanced by a pleasant acidity that adds depth and complexity. The coffee is crisp and floral, with a slight fruity edge that is more pronounced in lighter roasts, while medium roasts bring out the richness of the chocolate and nutty tones. It’s a wonderfully versatile coffee that can appeal to both fans of light and medium roasts, with a smooth finish that lingers.

About the Source/Farm

This coffee comes from the Asociación de Caficultores Ecológicos del Cauca (ACEC), a cooperative of 262 smallholder farms in the Cauca Department of Colombia. The cooperative’s members farm on average 1.5 hectares of land each, using organic farming practices that respect both the land and their communities. ACEC is dedicated to improving the quality of coffee through training programs, focusing on both farming techniques and managing the environmental impact of coffee cultivation.

The region of Cauca is known for its crisp, clean coffee profiles, which set it apart from other Colombian regions. The coffee here benefits from the combination of high elevation, ideal growing conditions, and dedicated farmers who carefully cultivate and process the coffee. ACEC also focuses on sustainable farming practices, with a commitment to organic certification and community development.

Tasted great, not bitter!

I made a cup of the Colombian coffee, and it was excellent! 👌 I crushed the beans with a rolling pin (I don't have a grinder or food processor) and then I put them in cool water in an ultrasonic bath for 6mins before filtering and mixing with milk, cream, and sugar.
It was really flavorful, with a fruity/nutty flavor that was reminiscent of cocoa beans and tropical fruit. I didn't get any bitterness (which I usually get even with a light roast) which was great and really allowed the individual flavors of the coffee beans to shine through. 👍
I'll definitely be buying again, it's 100% worth it for flavor alone, but it also supports small local business.
