This medium roast coffee offers a balanced and complex cup with clean, citric notes, complemented by soft fruit and floral tones. The red honey process brings a touch of sweetness and complexity, with subtle oak-like or peat-like finish. At the medium roast, the coffee develops the traditional chocolate and smoky notes that Dominican coffees are known for, creating a harmonious balance with the more exotic fruity and citric flavors. About the Source/Farm
The Ramirez Estate, located in the Jarabacoa region of the Dominican Republic, is a family-owned coffee farm that has been in operation since 1943. With 350 hectares of coffee production, the estate is dedicated to producing high-quality coffee while maintaining a strong commitment to social responsibility. The estate is exceptionally socially conscious, using fermented coffee cherries to create natural gas, which helps power their operations. They also invest in the local community by donating books and computers to schools and building a new school for children in rural areas, eliminating the need for long walks to class.
Over 400 people are employed at the estate, with 40% of the workers being women, many of whom are Haitian migrant workers. The estate ensures that these workers are paid significantly higher wages than the Fair Trade standard, reflecting their commitment to ethical business practices. The estate also focuses on sustainability, with efforts to recycle gas, implement water filtration systems to prevent river contamination, and support local education.
The Ramirez Estate is a shining example of how a successful coffee business can positively impact its community, combining great coffee production with a deep sense of responsibility for the environment and the people who work there.
