The Coffee and Its Flavor
This Timor-Leste coffee offers a clean, medium-bodied cup with delicate floral and fruity notes. At a medium roast, it retains a sweet, slightly lemony crispness, balanced with subtle chocolate undertones. The low acidity and smooth finish make it an enjoyable coffee for those who appreciate a more delicate cup, with hints of floral sweetness and a gentle chocolaty richness. About the Source/Farm
The coffee comes from the highlands of Ermera, Timor-Leste, a region known for its lush, rugged terrain and its rich history in coffee cultivation. The coffee is produced by the Lebudu Kraik group from Ducurai village, located just north of the peak of Tatamailau, the highest mountain in Timor-Leste. The group is part of a cooperative, Café Brisa Serena (CBS), which has spent over a decade working with smallholder farmers in the region, improving farm management and processing techniques.
The Ducurai farmers cultivate their coffee on small, family-owned plots that range from 0.5 to 1.5 hectares. The coffee trees are well-established and tended to for decades, producing high-quality beans. During harvest, coffee is carefully picked by hand, and the cherries are processed using traditional, small-scale methods. The coffee is fermented in small containers, dried on raised beds, and sorted by hand to ensure quality. CBS has played a significant role in enhancing the quality of the coffee by providing training and investment in better processing equipment, such as drying structures that help maintain proper moisture content.
The farmers of Ducurai not only produce coffee but also manage other crops and livestock, including taro, cassava, pigs, goats, and cows. Many farmers also practice composting and are certified organic. CBS’s work in the region continues to empower these farmers, ensuring fair wages and access to international markets. Through their partnership with Peace Winds Japan, CBS has helped rebuild coffee communities and established a thriving specialty coffee export chain.
