The Coffee and Its Flavor
This medium roast Nicaraguan coffee offers a vibrant, fruit-forward cup with winey and floral notes that shine through from the natural processing method. Light roasts present bright lemony and floral tones, transitioning to apple and red fruit flavors with a subtle chocolaty base. At a medium roast, the chocolate and rustic tones are more balanced, creating a full-bodied cup with low acidity and a complex, lingering mouthfeel. As the cup cools, the fruity factor becomes more pronounced, offering an exciting and dynamic tasting experience.
About the Source/Farm
El Pastoral is the first coffee farm established by Juan de Dios Castillo, built on a family legacy of coffee cultivation in Jinotega, Nicaragua. The farm spans 150 acres and operates with meticulous care from harvest to export. Cherries are hand-picked, sorted, depulped, fermented, washed, and partially dried on the farm before final drying at a nearby facility. J&M Family Coffee ensures quality control and traceability throughout the entire process, honoring the family’s commitment to sustainable, high-quality coffee production. The farm reflects a thoughtful, integrated model that supports both the farmers and the local community, creating a cup of coffee you can feel good about enjoying.
