The Coffee and Its Flavor
This medium roast coffee offers a clean and smooth cup with a semi-sweet edge, balancing nutty and chocolaty notes. At this roast level, the coffee develops a pleasant, low-acid profile, with just a hint of soft fruit, making it an easy-to-drink, well-balanced coffee. About the Source/Farm
Central de Cafetaleros del Nororiente (CECANOR) represents a cooperative of coffee farmers from over 70 communities in Northern Peru. The farmers practice organic farming, growing their coffee alongside shade trees, bananas, corn, and beans, in harmony with their cultural connection to the land. Each farmer practices selective picking, ensuring that only fully ripened cherries are harvested for processing at the farm’s micro-mill.
The cherries are carefully washed, floated to remove damaged or less dense beans, and then depulped, fermented, and gently dried before being stored for export preparation. CECANOR provides technical support to its members, guiding them from seed selection to certification processes, ensuring the highest quality coffee. The cooperative partners with PROASSA for export preparation, maintaining traceability and quality control throughout the post-harvest phase.
CECANOR also invests in critical infrastructure, such as road improvements and local warehouses, to support its farmers. The cooperative’s commitment to sustainability, quality, and community development has made it a vital part of Northern Peru’s coffee culture.
