About the Source/Farm

Sipi Falls, located in the Kapchorwa district of Uganda, is home to the Sipi Falls Wet Mill, which processes coffee from over 8,000 organic farms across the region. The wet mill, founded more than 20 years ago, was the first certified organic producer in Africa and has become a model for sustainable and quality coffee production. The mill centralizes the processing of coffee, capturing the best attributes of Mount Elgon’s terroir by using advanced techniques such as mechanical de-mucilaging, fermentation, washing, and careful drying.

Sipi Falls works directly with smallholder farmers, providing them with better prices for their cherry while relieving them of the labor-intensive processing tasks they would otherwise have to perform at the household level. The mill’s facilities, including a large organic nursery and a water filtration system, support the farmers in maintaining high-quality standards while also reducing environmental impact. Additionally, the wet mill’s cupping lab ensures that each batch is tasted and verified for quality before export.

The result is a coffee that represents the rich, diverse landscape of Mount Elgon, with a clean and balanced profile that highlights the region’s unique flavors. Sipi Falls also produces experimental microlots, showcasing the potential of the region’s best coffees and standing out as some of the most exquisite coffees in the world.
